Coconut Oil Chocolate Chip Oatmeal Cookies

Late for #nationalchocolatechipday 🤷🏼♀️ No joke, these are one of the best cookies I've ever had. So happy I found this recipe from @lmadesimple! I wanted to find a recipe that used coconut oil instead of butter. Cookies aren't going to provide health benefits for you, but I find if you give into cravings and bake cookies using real ingredients and from scratch, it's good every once in awhile! So, enjoy 'em, have them in moderation, and try them out ASAP!

What you need

cup chocolate chunks

tsp baking soda

tsp vanilla extract

cup coconut oil

cup old fashioned oats
egg

cup sweetened flake coconut

cup brown sugar

cup plain flour

cup granulated sugar

tsp salt
Instructions
In a large mixing bowl combine 1/2 cup melted coconut oil, 1/2 cup brown sugar, 1/4 cup granulated sugar, and 2 tsp vanilla extract. Mix until combined then mix in 1 egg. In a small mixing bowl whisk 1 cup old fashioned oats, 1 cup flour, 1/4 tsp salt, and 1 tsp baking soda. Gradually add dry to wet ingredients. Fold in 1/2 cup semi sweet chocolate chips, 1/4 cup chocolate chunks, and 3/4 cup sweetened coconut flakes. Roll into balls the size of about 1 tablespoon. Refrigerate for 1 hour. Preheat oven to 350 degrees F. Place no more than 12 cookies on a baking sheet with parchment paper. Bake for 10-11 minutes. Cookies should be soft but golden brown on the top. Let cool for 2-3 minutes then transfer on a cooling rack.View original recipe
