1 ½ cup pearl couscous

skinless boneless chicken thighs

4 skinless boneless chicken thighs

chicken stock

2 ¼ cup chicken stock

parsley

1 bunch parsley

unsalted butter

2 tbsp unsalted butter

lemon

1 slice lemon

salt & pepper

1 tsp salt & pepper

Instructions

In a skillet, add oil and chicken then your seasonings and cook for 3-5 minutes each side then remove and set aside. Add butter, shallots and garlic and cook for about two minutes. Add in @riceselect pearl couscous and toast for 2-3 minutes. Then add in the chicken stock, the cooked chicken thighs, lemon slices, cover and simmer for 15 minutes. Top with chopped parsley and enjoy!
