Chopt Dupe Kale Salad

Inspired by a costly Chopt salad, this recipe offers a homemade version of a kale salad at a fraction of the price. You can use any greens you like, but the original recreation features kale, fresh vegetables, crumbled feta, tricolored quinoa, avocado, and rotisserie chicken, all tossed with your dressing of choice.

What you need

cucumber
tsp salt
bunch kale

chicken

cherry tomato

cup quinoa

avocado

oz feta
fl oz salad dressing
Instructions
Rinse kale and “massage” with olive oil and salt to help reduce the bitterness (see my kale highlight). Chop all veggies finely and avocado and add to a bowl. Add feta, rotisserie chicken, quinoa, dressing, toss well, and pat yourself on the back for not spending $18 on a salad.View original recipe
