Instructions
- preheat oven to 400°F - line a baking sheet with a bit of olive oil and spread evenly, then add the chicken from the package and cook for 40 minutes (until it’s internal temp is 165°F) - meanwhile, rinse quinoa well and add to a pot. add double the amount of water and bring to a boil, stir, then simmer and cover for 10-15 minutes or until the water has absorbed - cut the cucumber and the cherry tomatoes into quarters and mix together - in two large bowls, add an equal amount of quinoa, handful of arugula, cucumber tomato salad, 1 chicken thigh each, a dollop of tzatziki and a lemon wedge to garnish each - store the rest of the chicken in the fridge for 3-4 daysView original recipe
