If you know me you know my love for these SWEET POTATO SKILLETS ๐ This is so easy to make and easy to customize! I love adding eggs but you can also do chicken sausage or black beans to make it plant based ๐ฑ Pro tip: if you have a cast iron skillet use it for this! It will help make the sweet potatoes extra crispy but if not no worries just make sure to cook them for an additional 5-10 minutes. cup red bell pepper

Rinse sweet potatoes well and cut into cubes. Dice the onion and bell pepper. In a cast iron or regular skillet over low-medium heat, add olive oil and the sweet potato and cook for 10 minutes while stirring in between. Pierce sweet potatoes with a fork to make sure theyโre tender. Add the onion and bell pepper and stir. Create two โwellsโ for each egg and crack them in each, cook for 2-3 minutes until the whites have cooked or cover with a lid for over easy. Add diced avocado on top.View original recipe
