Mini Smashed Potatoes

The best way to elevate potatoes is making MINI SMASHED POTATOES! This is such an easy appetizer or side to dinner. Impress your friends for your next get together with this! It only requires FIVE simple ingredients! They’re soft on the inside yet crispy on the outside and so delicious. You can go the simple route and top with parmesan and herbs or even serve it with a dipping sauce too!

What you need

oz parmesan

bunch fresh chives

tsp garlic powder
tsp salt

tsp pepper

lb gold potatoes
Instructions
Preheat oven to 425°F. Wash potatoes well. Add the potatoes to a large pot with water and a pinch of salt, bring to a boil, let cook for 20-25 minutes until they’re soft enough to pierce with a fork. Drain the pot of water and line a baking sheet with olive oil. Add the potatoes to the baking sheet and “smash” them gently with the back of a cup. Add a drizzle of olive oil, salt, pepper and garlic powder and cook for 25 minutes. Top with parmesan and chives.View original recipe
