Edamame Guacamole

EDAMAME GUACAMOLE makes for a perfect high protein snack 🥑 Or you can use it as a spread to add extra protein to your avocado toast! 🙌 I first had edamame guac at @livetruefood and was obsessed so I had to remake my own version at home.

What you need

cup red onion

jalapeno

tbsp cilantro

salt

cup edamame

avocado
Instructions
- cook edamame in boiling water for 4 minutes to defrost and then run under cool water to cook down - add edamame and 1 diced avocado to a food processor and blend (reserve some edamame for topping here) - add in chopped onion, jalapeño, lime juice, salt and the other avocado and blend again until creamy - add to a bowl with cilantro and mix in - top with additional edamame shells and enjoy! feel free to adjust with extra salt or lime juice tooView original recipe
