What you need
lime

ground black pepper

salt

crushed red pepper

curry powder

ground turmeric

cumin powder

ginger root

garlic

yellow onion

sweet potato

coconut milk

petite tomatoes

garbanzo beans
Instructions
- dice onion and cut sweet potato into small cubes, we want them to be small to they cook fast and even - heat olive oil in a sauté pan over medium heat - add onion, garlic and ginger and mix, cook for a couple minutes - add the can of tomatoes, coconut milk, chickpeas and cubed sweet potato - bring to a boil, then reduce to a simmer and cook for 20-25 minutes or until the sweet potatoes are soft and fork tender - add cumin, turmeric, curry powder, red pepper flakes and mix, then add spinach until wilted - add salt and pepper to taste and mix - serve over rice, optional stir in some juice from the lime for a brighter flavorView original recipe
