This easy BBQ chicken plate with roasted broccoli and white cheddar mac and cheese is a quick and affordable dinner idea, perfect for meal prepping. Using chicken thighs keeps it tender and flavorful.

What you need
tsp salt

tsp garlic powder

tsp paprika

pepper
chicken thigh
head broccoli

oz macaroni & cheese dinner

cup barbecue sauce
Instructions
Preheat oven to 400°F. Line a baking dish with foil and add the chicken thighs. Coat with a drizzle of olive oil on both sides and season with salt, pepper, garlic powder and paprika. Bake for 20 minutes. Meanwhile, wash the broccoli and cut into pieces, then add to a parchment lined baking sheet with olive oil, salt and pepper. After 20 minutes, add barbecue sauce to each side of the chicken and bake on the other side for an additional 20 minutes until they reach an internal temperature of 165°F. Add the broccoli in for 20-25 minutes as well, flipping in between. Meanwhile, cook the mac and cheese according to the package directions.
