Homemade Chipotle Bowl

Craving Chipotle? Make this authentic-tasting bowl at home! The key is using a can of chipotle in adobo for a big flavor difference. Chicken thighs are recommended for flavor and affordability. Don't forget the easy cilantro lime rice!

What you need
guacamole

tsp ground cumin

can chipotle in adobo

tbsp lime juice

bunch cilantro

cup white rice

boneless chicken thighs

tsp garlic powder

pico de gallo
Instructions
add the can of chipotle in adobo to a blender and blend until smooth transfer chicken to a ziploc bag along with chipotle in adobo mixture and seasonings and marinade for at least one hour or overnight heat 1-2 TBS of oil on a skillet over medium high heat and cook the chicken on each side for 5-8 minutes until cooked then cut into cubes meanwhile, rinse rice and add to a pot with double the amount of water (2 cups) and bring to a boil once boiling, bring to a simmer and cover with a lid for 20 minutes once cooked, mix rice with lime juice and chopped cilantro, adjust to taste add rice to a bowl with chicken, pico, cheese, and guacView original recipe
