ROASTED CARROT FRIES 🥕

Your new favorite way to eat carrots! Growing up I despised cooked carrots, especially if they were steamed. So the thought of cooking carrots was out of the question until I realized I can make them crispy and roasted. These taste similar to sweet potato fries! They’re perfect as a dinner side, salad topping or a snack. I served mine with Trader Joe's cashew kale pesto and it was definitely the move.

What you need

lb carrot

tsp garlic powder

tsp paprika

tsp pepper

tsp table salt
Instructions
Preheat oven to 425°F. Wash & peel the carrots, cut in half then in half lengthwise to create thin “fries”. Make sure they all are around the same size so they cook evenly. Toss the carrots in with olive oil, salt, pepper, paprika and garlic powder and add to a parchment lined baking sheet. Roast for 25-30 minutes or until crispy making sure to flip halfway.View original recipe
