Taco Stuffed Sweet Potatoes

Putting a spin on #tacotuesday with these TACO STUFFED SWEET POTATOES! This easy dinner idea is vegan and so good. Instead of baking, the sweet potatoes are microwaved for just 7 minutes, saving significant time. If you’re craving taco meat you can definitely add that in too!

What you need
tsp salt

pepper

tbsp chili powder

tsp garlic powder

avocado

bunch cherry tomato

red onion

sweet potato

red bell pepper

can black beans

cup corn
Instructions
Wash the sweet potato well and dry. Using a fork, poke holes in the sweet potato, wrap in a paper towel, and microwave for 5-7 minutes depending on the size of the sweet potato. Caution: use an oven mitt to take it out of the microwave since it will be very hot. Rinse and drain can of black beans. Add olive oil to a skillet over medium heat, add diced red onion, 1/2 can of black beans, diced red bell pepper, corn, and a dash of salt, pepper, garlic powder, chili powder and cook for 5 minutes stirring in between. Cut the sweet potato in half, scoop out some filling (optional), add bean mix inside, chopped cherry tomatoes, and top with mashed avocado.View original recipe
