Inspired by the classic Girl Scout cookie, this Samoa Cookie Oatmeal features a healthy "caramel" sauce made from maple syrup and peanut butter, topped with coconut flakes and dark chocolate.

tbsp maple syrup

cup almond milk

cup unsweetened coconut flakes

dark chocolate chips

cup oats
Instructions
How to make: • For the caramel sauce, place a pot over medium heat, combine 2 tablespoons maple syrup and 2 tablespoons peanut butter, and stir. Let boil for a minute and then add 1/3 cup almond milk. Stir and let boil again if consistency isn’t thickened enough. • Optional: toast some coconut flakes in the toaster oven. • In a small bowl, combine 1/2 cup oats and 1/2 cup of almond milk, microwave for one minute. • Top oats with a bit more almond milk, a combination of coconut flakes, and toasted coconut flakes. • Drizzle with caramel sauce and top with dark chocolate.View original recipe
