Minestrone Soup

What you need
tsp salt

pepper

bunch thyme

tsp red pepper flake

oz fresh tomatoes

yellow onion

cup shell pasta
oz mushrooms

tbsp tomato paste
bunch kale
cup vegetable broth

cup water

clove garlic clove

can canned white cannellini beans

celery stalk

carrot
Instructions
In a large pot over medium heat, add olive oil, garlic and onion and sauté for about 5 minutes. Add carrots, celery and mushrooms and cook for an additional 5 minutes. Add broth, 2 cups of water, and can of tomatoes, bring to a boil, add spices, then simmer for 20-30 minutes. Bring soup back to a medium heat, add pasta and cook for 8-10 minutes.
