Basic Pad Thai

This basic Pad Thai is super simple and not to mention so delicious. The recipe simplifies the sauce, offering an option to use store-bought. Shrimp is added but can be substituted with tofu or omitted. The key to a great Pad Thai is the toppings, including peanuts, cilantro, and fresh lime juice. This recipe makes a big batch of about 3-4 servings.

What you need
shrimp

bunch cilantro

lime

peanut
mushrooms

red bell pepper
tbsp liquid honey

white onion

oz rice noodles

tsp sriracha hot sauce

tbsp peanut butter

tbsp rice vinegar

tbsp soy sauce

clove garlic clove

carrot
Instructions
1. In a small bowl, mix all the ingredients together for the pad thai sauce. 2. Bring a pot of water to a boil and cook the rice noodles for 4 minutes, then drain. 3. Add olive oil to a skillet over low-medium heat, add onion and minced garlic cloves, cook until fragrant for 2-3 minutes. 4. Add the sliced bell pepper and carrots to the skillet and sauté for 3-5 minutes until cooked. 5. Add the defrosted shrimp and cook for 2-3 minutes each side. 6. Add the noodles and sauce, bring down to a simmer and mix. 7. Add everything to a bowl, top with cilantro, lime and crushed peanuts.View original recipe
