New Year's Good Luck Lentil Soup

Every New Year, my mom makes lentil soup for good luck, abundance and good fortune. It’s a tradition passed down from my Italian great grandmother so I’m sharing it with you! This soup is comforting, delicious, contains great nutrients making it the perfect dish to enjoy at any time of the year too.

What you need

white onion

oz parmesan

clove garlic clove

oz tomato sauce
tsp salt & pepper

bay leaves
cup dried lentils

celery stalk

leek

carrot
cup chicken broth
Instructions
Chop the carrots, celery, leeks, and onion. Add vegetables (except the leeks) to a large pot with olive oil over medium heat and sauté. Add the minced garlic and leeks and stir. Add the broth, tomato sauce, rinsed lentils, and bay leaves and bring to a boil. Simmer and cook for 15-20 minutes. Season with a generous amount of salt and pepper and top with parmesan or pecorino romano.View original recipe
