Healthier Tagalong Cookies

Since it’s girl scout season I had to make some HEALTHIER TAGALONG COOKIES 🍪 Being a girl scout in my younger years, selling cookies was one of my favorite times of the year. Tagalongs are some of my favorite girl scout cookies next to Samoa’s but deserve just as much recognition. They’re pretty simple to make and only require a couple ingredients! Gluten free, vegan and so delicious 🤤 Happy Tuesday my friends! 💛

What you need

tbsp maple syrup

tsp vanilla extract

cup semisweet chocolate chips

cup almond flour

cup creamy peanut butter
Instructions
Preheat oven to 350°F. In a large mixing bowl, mix together the ingredients for the cookie layer until it becomes a dough. Roll dough into 1-1.5 TBS sized balls, then flatten and create a well in the middle with your thumb until you create about 12 cookies. Add to a parchment lined baking sheet and bake for 10-12 minutes watching carefully not to burn. Mix the peanut butter layer ingredients together and add about 1/2 tsp size to the well in each cookie once they cool. Freeze the cookies for 10-15 minutes until the peanut butter has set. Melt the chocolate and coconut oil and dip each one top and bottom into the mixture and add to a parchment lined plate. Freeze for 10 more minutes. Cut in half and enjoy.View original recipe
