Gluten-Free Vegan Prune Bars (Fig Bar Twist)

A fun, healthy twist on classic fig bars, using California Grown prunes for the filling. These bars are gluten-free, vegan, and refined sugar-free, making them a perfect and filling snack for busy days.

What you need

pinch salt

tsp vanilla extract

tbsp fresh orange juice

tsp baking powder

cup coconut sugar

cup oat flour

tsp ground cinnamon

tbsp orange juice
cup unsweetened applesauce
orange zest

tbsp coconut oil
oz dried fruit
Instructions
Preheat oven to 350°F. In a bowl, mix together the oat flour, coconut sugar, baking powder, cinnamon, and salt. In a separate large bowl, mix together the applesauce, coconut oil, orange juice, and vanilla. Pour the dry ingredients into the bowl with the wet ingredients and mix until you form a dough; it shouldn’t be dry or too sticky. If it’s dryer add more orange juice. In a small bowl, add the prunes and warm water and let sit for a couple minutes until softened, then drain. Add California grown prunes to a blender along with the rest of the filling ingredients (orange juice from half an orange, orange zest, honey) and blend. Place dough between two pieces of parchment paper and roll until you get a long rectangle. Place California grown prune filling in the middle of the dough then take one side of the parchment and fold. Do the same on the other side, like a pamphlet! Place the log of dough seam side down on a parchment lined baking sheet and cut into about 12 pieces and separate. Bake for 12-15 minutes and let cool!View original recipe
