These curry peanut noodles are an upgraded, cooler, and more mature version of classic peanut noodles, tasting straight out of a restaurant. A quick and easy dish perfect for a satisfying meal.

What you need

bunch scallion

tsp turmeric powder

cup chicken broth

cooked chicken breast

spaghetti noodles

tsp curry powder

tbsp creamy peanut butter

clove garlic clove
Instructions
Bring a pot of water to a boil, add noodles and cook according to the directions on the packaging, then drain. While noodles cook, mix all ingredients together for the sauce in a separate bowl, starting with 1/4 cup of the broth. Add the drained noodles back into the pot along with the sauce over low-medium heat, stir until combined. Adjust the sauce accordingly; for a looser sauce, add the remaining 1/4 cup of broth and adjust seasonings as desired. Serve immediately with cooked chicken (or your chosen protein), sliced scallions, and fresh cilantro for topping.View original recipe
