Avocado Chickpea Salad

One of my favorite cheap pantry lunches is AVOCADO CHICKPEA SALAD 🥑 Chickpeas are such a great, affordable way to get protein and I always have them on hand. That’s why this is a great lunch to whip together on a whim! Especially if you aren’t a fan of mayo, that’s where the avocado comes in. I usually use relish but didn’t have any so replaced it with banana peppers and it was also so good 🤤 I had it open faced sandwich style this time!

What you need

bread

tbsp red onion
lemon

tsp dijon mustard

avocado

can chick peas
tbsp pickle relish
Instructions
- rinse and drain a can of chickpeas - add half of the chickpeas to a bowl along with 1/2 avocado and mash with a back of a fork, don’t mash all the way you still want some texture - add diced red onion, pickles or banana peppers, dijon and mix - add juice from half a lemon slowly and adjust to taste along with salt and pepper - serve on bread with lettuce or make it into a sandwichView original recipe
