- peel plantain and cut off ends
- cut into 1 inch pieces and add to a bowl with olive oil, garlic, salt, toss
- air fry at 350°F for 3-5 minutes on each side
- place plantain and press down in a tostonera (tostone press) or between parchment paper and press with a flat surface like a mug or plate
- turn air fryer up to 400°F and air fry for 4-6 more minutes or until golden brown
- top with extra salt and serve hot
- mix the ingredients for the mayo ketchup together and serve with the tostones
