Apple Pie Bars

Easy-to-make Apple Pie Bars with a crust that doubles as a crumble topping. They are gluten-free, vegan, not overly sweet, and perfect for Thanksgiving or any time of year. Serve with a scoop of vanilla ice cream.

What you need

cup maple syrup

tsp vanilla extract

tsp ground cinnamon

cup flour

tbsp nondairy butter

tsp baking powder
tsp cornstarch

tbsp coconut oil

tsp cinnamon

tbsp coconut sugar

honey crisp apples
Instructions
Preheat oven to 350°F. Line an 8x8 baking dish with parchment paper. In a large bowl, add all the ingredients for the crust (oats, flour, baking powder, melted butter/coconut oil, maple syrup, vanilla, cinnamon) and stir until combined. Add 1 2/3 cup of the crust mixture to the baking dish and set aside, placing the remainder in the fridge. In a sauté pan, add butter over low-medium heat and the apples. Sprinkle the cinnamon and sugar over the apples until coated and cook for several minutes until the apples become soft. Turn off the heat and add the cornstarch and vanilla, then stir. Add the apple filling to the baking dish. Take the crumble mixture from the fridge and crumble on top of the apple filling. Bake for 30-35 minutes until golden brown.
