Brighten up your morning with this AVOCADO TOAST COMBO. If you’re looking for a way to use pickled onions, this is one of my favorites. Pickled onions are the best on salads, tacos, but especially on avocado toast. Toast bread in the toaster oven. Meanwhile, crack eggs into a bowl and whisk with a fork. Add a pinch of olive oil to a pan and add the eggs, cook until it becomes scrambled. Mash the avocado on top of the toast, add the scrambled eggs, then top with the pickled onions and cracked pepper.
