Chicken Pesto Panini

The excitement for this CHICKEN PESTO PANINI is real! A craving for a crispy panini is satisfied using a grill pan. This recipe features vegan mozzarella, pesto, and roasted red peppers. Can also be made in a skillet if a panini pan isn't available.

What you need

fl oz olive oil

roasted red bell pepper

sourdough bread
cooked chicken

bunch pesto
Instructions
1. Add olive oil to a grill pan and put on low-medium heat. 2. While the pan is warming up, add pesto on top of one slice of bread, then layer with chicken and mozzarella. 3. Place the assembled half of the sandwich onto the grill pan on a diagonal for grill marks. 4. Cover and let cook for 3-4 minutes. 5. Take the other piece of bread, spread pesto, and top the sandwich. 6. Flip the sandwich and cover again for an additional 3-4 minutes. 7. Cut on a diagonal and enjoy!View original recipe
