CHOCOLATE CHUNKY VEGAN GRANOLA

Preheat oven to 350°F. In a large bowl, combine the dry ingredients: rolled oats, cocoa powder, coconut sugar. In a separate bowl, combine the wet ingredients: peanut butter, melted coconut oil, maple syrup and vanilla. Combine the wet with the dry ingredients and stir well. Fold in the chocolate chips, coconut shreds and a pinch of salt. Add to a parchment paper lined baking sheet and press down well, bake for 13-15 minutes. If you want gooey chocolate pieces, add a couple chips on top out of the oven. Let cool for 10 minutes, then break into clusters. Store in an airtight container.
