Easy Canned Chickpea Falafels

My latest obsession is FALAFELS 🧆🥙 They’re a great source of plant based protein and are packed with flavor 😛 I always order them out so I decided to make my own! 🌱 Traditionally, dry chickpeas are used and soaked overnight but we don’t have time for that so I just used canned chickpeas and they came out amazing! They’re also typically deep fried but I just shallow fried them in a pan to use less oil 🙌🏻

What you need

tbsp flour

can chickpea

bunch fresh parsley

bunch cilantro

tsp coriander

tsp salt

white onion

dash black pepper

clove garlic clove
Instructions
Rinse and drain can of chickpeas and dry them WELL, you want to remove as much moisture as you can. In a food processor or blender, combine chickpeas, onion, parsley, cilantro, garlic, spices and combine until mixed. Add the flour in a food processor or transfer to a bowl and mix until combined. Refrigerate the "dough" for at least 30 minutes, the longer the better. Add avocado oil to a skillet over medium-high heat, form 2 TBS size falafel patties and fry on each side for 2-3 minutes until golden brown. Serve over rice, greens or in a pita along with feta, cucumber, tomato, pickled onions, and tahini.View original recipe
