What you need

tsp salt
cup warm water

cup white vinegar

clove garlic clove

tbsp honey
Instructions
1. Cut the ends off the red onion and peel the outside layer. 2. Carefully cut the onion into thin slices. You can make rings, or for easier handling, cut the onion in half first and then make half-moon slices. 3. Add the onion slices to a large jar (e.g., Weck jar, Mason jar, or an old pasta sauce jar). 4. Add 1 cup of warm water to the jar. You can get warm water from a Keurig or microwave it until warm. 5. Add the 1/2 cup white vinegar (apple cider vinegar can also be used), 1 tablespoon honey (or other sweetener like sugar/maple syrup), 1/2 teaspoon salt, and the optional 1 garlic clove (or jalapeƱos for a kick). 6. Close the jar tightly and shake well to combine all ingredients. 7. Refrigerate for at least one hour before serving. Store in the fridge for up to 2 weeks.View original recipe
