Easy Poké Bowl

Rinse rice well, add to a pot over the stove with double the amount of water (in this case 1 cup). Bring the pot of rice to a boil, then simmer and cover for 20 minutes. Meanwhile dice the cucumber, slice the carrot and cut the avocado into slices. Let the rice cool then add to one half of a bowl and arugula to the other half. Top with cucumber, carrot, avocado and ahi tuna. Top with seasonings and serve with soy sauce.
