Easy Soy Chorizo Tacos

Dancing into this week with these easy SOY CHORIZO TACOS 🌮💃🏼 I cant believe I’ve gone so long without @traderjoes soy chorizo in my life, it’s inexpensive, delicious and vegan! Added it to their new jicama wraps but feel free to use any tortilla you like. Happy Monday y’all! ✨

What you need

cup greek yogurt

lime

bunch fresh cilantro

tbsp olive oil

white onion

chorizo crumble
jicama
Instructions
Heat 1 TBS olive oil in a skillet over low-medium heat, add onion and cook for 3-4 minutes until translucent. Remove casing from the soy chorizo, add to the skillet, break with the back of a spatula and cook for 8-10 minutes stirring in between. In a small bowl, mix yogurt with lime juice and chopped cilantro. Add chorizo to jicama wraps, add pineapple, yogurt crema and additional cilantro.View original recipe
