Preheat your oven and cook sweet potato fries (refer to the "cooking 101" highlight or previous posts for detailed instructions on making fries). Meanwhile, heat a skillet over low-medium heat with a drizzle of olive oil. Add the veggie patty and cook for 3-4 minutes on each side (note: the package directions may suggest longer, but this cook time helps prevent burning). In a small bowl, mash the avocado. Add a splash of olive oil and a pinch of pink Himalayan sea salt to the mashed avocado for easier mashing and added flavor. Once the patty is cooked, place it on a romaine lettuce leaf.
