About to solve all your problems with this EGG QUINOA BOWL 🍳 Why you ask? Because this meal can be enjoyed for breakfast, lunch OR dinner 🙌 Quinoa is such an underrated staple I meal prep all the time. I love to switch up my breakfasts with this and have been making a bowl like this since college but it can be enjoyed whenever! I paired it with some kale, avocado and soft boiled eggs 🤤 you can also do a fried egg too! Happy Thursday y’all 🥳

What you need

fl oz olive oil
bunch kale

tsp chicken bouillon

avocado

cup water

cup quinoa
egg
Instructions
Rinse quinoa and place in a pot over the stove with double the amount of water (1 cup). Bring to a boil. Season quinoa how you’d like, I like to add 1/2 tsp chicken bouillon, cover with a lid and simmer for 15 minutes. Meanwhile, bring a pot with 1 inch of water to a boil and gently add in the eggs, cover and cook for 6.5 minutes. Drain the water from the eggs, add them to an ice bath and remove the shells. In a bowl, massage olive oil into the kale to reduce bitter taste. Add the quinoa, soft boiled eggs, avocado slices and hemp seeds.View original recipe
