Gemelli Pasta with Sweet Sausage and Spinach

What you need

fl oz olive oil

pepper

oz tomato sauce

white onion

lb sweet italian sausage

cup fresh spinach

cup cherry tomato

cup gemelli
Instructions
Bring a pot of water to a boil and cook pasta for 10-12 minutes. Meanwhile, cut the ends off the onion, then cut lengthwise and into slices. Add slices of onion to a pan over low-medium heat with olive oil and sauté for 3-5 minutes until translucent. Remove the casing from the sausage with a knife, add the meat to the skillet, break it up into crumbles, and cook until browned. Add spinach and tomatoes and cook for 2-3 minutes, then crush the tomatoes with the back of a fork. Drain the pasta and reserve a cup of pasta water. Add the pasta to the pan along with some reserved pasta water and 1/2 the can of tomato sauce. Serve with crushed pepper and parmesan.View original recipe
