These healthy Samoa cookies are a vegan and gluten-free version of the classic Girl Scout cookie, made with whole ingredients to taste really close to the original without caramel.

What you need

tsp coconut oil

cup unsweetened shredded coconut

tbsp creamy peanut butter

cup dark chocolate chips

cup date
Instructions
Soak dates in a bowl of cold water for about 5 minutes—this helps them blend. Toast 3/4 cup coconut shreds on a piece of foil in the toaster oven; be careful, they toast quickly. In a mini food processor/blender, add the soaked dates, the toasted 3/4 cup coconut shreds, and the remaining 1/4 cup non-toasted coconut shreds and blend. Add the peanut butter, coconut oil, and maple syrup to the mixture and blend again. Take a tablespoon of the mixture, roll into a ball, flatten, and create a hole in the middle (a chopstick works well). Freeze the cookies for 15-20 minutes. Melt chocolate using the microwave or double boiler method, dip the bottom of each cookie in, and then drizzle chocolate on top.
