Healthy Veggie Ramen

I know what you may be thinking: why in the world are you posting a picture that goes against your Instagram handle? 🤔 I always look to find healthier alternatives to not so healthy food so I wanted to tackle ramen! The key is to load up on veggies and healthy sources of protein ✔️ Don’t be intimidated! This is super easy just requires throwing a lot of things together 😊

What you need

fl oz olive oil
tsp salt
oz sesame seed
mushrooms
cup broccoli
egg

tsp dijon mustard

tbsp soy sauce

oz egg noodles

carrot

jalapeno
cup vegetable broth
Instructions
In a large pot, sauté mushrooms and broccoli for 3-4 minutes over medium heat with olive oil. Pour in miso broth, bring to a low boil and then simmer for 5 minutes. Add carrots, Dijon, soy sauce, and 2 servings of egg noodles to the broth and let simmer for 3-4 minutes. Taste broth and add salt and garlic powder for additional flavor. In a separate pot, bring water to a boil, gently place in egg(s) and reduce to a low boil for 6 minutes then transfer to a bowl with ice.
