Homemade Sweet Potato Gnocchi

What you need

bunch spinach

garlic

oz butter

pepper

sweet potato

tsp salt

cup plain flour
Instructions
Wash and scrub sweet potatoes well. Pierce with a fork, wrap in a paper towel, and microwave for 7-10 minutes until soft. Peel the skin off the sweet potatoes, add to a bowl, and mash. Add flour gradually and the salt and mix until you get a dough. Add flour to your counter and separate dough into handfuls, then roll each one out into ropes. Cut the ropes into small squares, roll each piece against the back of a fork for the gnocchi shape, and set aside. Bring a large pot of water to a boil. Add gnocchi (in batches) for 2-3 minutes and remove with a slotted spoon when they float to the top. Add butter and minced garlic to a skillet over medium heat. Add gnocchi and sauté until crispy.
