What you need

pepper

cup fresh mint

cup quinoa

tbsp red onion

cup feta

tbsp extra-virgin olive oil
cup fresh parsley

lemon

cup cucumber

cup unsalted pistachios

cup chickpea
Instructions
Rinse quinoa well and add to a pot along with one cup of water. Bring to a boil, then simmer and cover for 15 minutes or until the liquid has cooked off. Meanwhile, dice your cucumber, red onion, parsley, mint, and pistachios. In a large bowl, add the cooked quinoa, diced vegetables, and pistachios, chickpeas, feta, lemon juice, olive oil, salt, and pepper, and give everything a mix until well combined.
