- cook pasta according to package directions
- cut chicken into bite sized pieces
- heat a large pan over medium heat and add the oil, chicken, seasonings and stir. cook for 8-10 minutes flipping halfway then transfer the chicken to a plate
- to the same skillet, add butter, onions, tomato paste and stir
- stir in the cream, cooked pasta, parmesan, sun dried tomatoes and simmer for a few minutes until thickened
- lower heat and add chicken back in and stir in the spinach until wilted
- top with extra parmesan and enjoy!
