MICROWAVE SWEET POTATO

Ever since I learned how to cook a sweet potato in the microwave instead of the oven I never looked back. Cooking a sweet potato in the oven takes about 45 minutes whereas in the microwave it only takes about 5! I’m always about saving time where I can. This is my go-to way to cook mine perfect every time.

Wash and dry a sweet potato well. Using a fork, poke some holes in the sweet potato; this will help give the steam a way to escape. Lightly dampen a paper towel with water and wrap it around the sweet potato to help the cooking process. Place in the microwave and cook for 5-7 minutes; cooking times will vary on the size of your sweet potato so you can always add it back to the microwave if need be. Using an oven mitt, carefully remove the sweet potato as it will be hot! You can press on the sides to check if it’s soft and leaves an indentation. Cut along the middle of the sweet potato and fluff the inside with a fork, and that’s it!View original recipe
