New Year's Lucky Lentils

Every new year my mom makes homemade lentils for good luck. It’s been a tradition passed down from my Italian great grandmother. These are so comforting, delicious, and contain all the best nutrients.

What you need

fl oz olive oil
tsp salt
cup dried lentils

clove garlic clove

oz tomato sauce

celery stalk

bay leaves

white onion
cup chicken broth

carrot

leek
Instructions
Chop the carrots, celery, leeks and onion. Add vegetables except the leeks to a large pot with olive oil over medium heat and sauté. Add the garlic and leeks and stir. Add the broth, tomato sauce, rinsed lentils and bay leaf and let it come to a boil. Simmer and cook for about 30 minutes until lentils are tender.
