A homemade version of the Pressed Juicery Freeze, perfect for when you're craving a frozen treat. This recipe requires only 5 ingredients and tastes very close to the original, though the texture is more like a frozen smoothie than ice cream.
1. Add dates to a bowl with water and let them soak for 5 minutes to soften.
2. Drain the water from the dates.
3. Add the softened dates to a powerful blender or food processor along with 1 3/4 cups of the almond milk, vanilla, cinnamon, and salt.
4. Blend the mixture until well combined and smooth.
5. Store the mixture in a Tupperware container and freeze overnight.
6. The next day, let the container thaw slightly by running the sides under warm water for a moment.
7. Flip the frozen block onto a cutting board and cut it into cubes.
8. Add the cubes to a blender or food processor along with the remaining 1/4 cup of almond milk.
9. Blend until the mixture becomes creamy, adding a splash more almond milk if needed to achieve the desired consistency.
10. Serve immediately in a bowl or add to a piping bag for a soft-serve effect.
11. Don’t forget to add your favorite toppings, such as diced strawberries, mini chocolate chips, and coconut shreds.
