Growing up Puerto Rican I was exposed to SO many amazing dishes 馃憦馃徏 But many tasty meals tend to be fried and greasy which isn鈥檛 the best to have on the daily 馃様 Instead of compromising on the delish Spanish flair, I incorporated in this quinoa meal prep!

What you need

chicken bouillon

red bell pepper

cup quinoa

can canned diced tomatoes

can black beans

cup water
sazon completa seasoning

avocado

white onion
green bell pepper

clove garlic clove

jalapeno

can corn
Instructions
鈥hop up white onion and bell peppers 鈥n a large saucepan, saut茅 onion + minced garlic in olive oil over medium heat until translucent, then add the bell peppers and jalape帽o to saut茅 鈥dd corn, rinsed beans, and canned tomato to the pan 鈥dd quinoa and 1 cup water along with bullon and saz贸n 鈥ring to a boil for a minute or two then simmer and cover for 35-40 minutesView original recipe
