What you need

red onion

clove garlic clove

tsp red bell pepper

zucchini

tsp lemon juice

cup extra-virgin olive oil

tsp salt

italian sausage links
tsp dried italian seasoning

box penne pasta

tsp pepper

tsp dijon mustard
Instructions
Preheat oven to 400°F. Wash and cut all vegetables and add to a parchment-lined baking sheet. Drizzle with olive oil, salt, and pepper, then toss. Bake for 15-20 minutes, tossing halfway, until roasted. Meanwhile, bring a pot of water to a boil and cook your pasta according to package directions. Drain the pasta and toss with the roasted vegetables. In a small bowl, mix together all dressing ingredients (extra virgin olive oil, lemon juice, minced garlic clove, dijon, salt, pepper, Italian seasoning). Add the dressing to the pasta (start slow, you may not use all of it) along with feta crumbles and toss again to combine.View original recipe
