What you need

Instructions
- cook sushi rice according to package - preheat oven to 400°F - dice thawed shrimp into small pieces and add to a large bowl - mix the ingredients for the spicy mayo and add 2 TBS of it to the shrimp along with salt, soy sauce, and mix - cut nori into squares and add rice to each, focusing on the center - add each piece of nori with rice to a muffin tin, add a scoop of the shrimp mixture and bake for 15 minutes - top with a drizzle of leftover spicy mayo, sesame seeds and scallions or your favorite sushi toppings *Yields: 8 cupsView original recipe
