Super Bowl Potato Skins

Super Bowl Sunday means one thing, POTATO SKINSSS ππ₯π» Are these healthy? mehhh, are they good? YES ππ» To me thatβs what super bowl food is all about ππΌββοΈ I cut the cooking time in half by microwaving them to start then just crisped them up in the oven β¨ Now thatβs a touchdown in my book ππ» Hope you celebrate with ALL the good food!

What you need
tsp salt

cup sour cream

fl oz olive oil

bunch scallion

tbsp unsalted butter

russet potato
turkey bacon
oz shredded cheddar
Instructions
Wash the potatoes well, cover with a bit of olive oil, pierce with a fork, add to a plate. Microwave on high for 5 minutes, turn, then microwave another 5 minutes. Heat oven to 425Β°F. Cut potatoes in half and scoop out the middle but leave some potato inside. On a lined baking sheet, place potatoes face down, brush on butter, bake for 5-7 minutes. Flip, brush with butter again, bake for 5 minutes. Microwave bacon between two pieces of paper towels on a plate for 4 minutes. Add salt & pepper, shredded cheese, & bacon, cook for 3-4 more minutes.
