Thai Bowl with Peanut Sauce

Celebrating Friday with this fiesta of a THAI BOWL 🌶 I can’t get enough of this it’s SO good! It reminds me of something I would order out too 🙌🏻 The best part is this peanut sauce which can go with anything! 🥜 If you’re unfamiliar with the ingredients, you can find rice vinegar in the international aisle of your grocery store and I use @traderjoes sesame oil! What you need

bunch salad greens

bunch scallion
oz sesame seed

cup brown rice

tbsp rice vinegar

tbsp water

tbsp soy sauce

tsp table salt

pinch ginger

purple cabbage

fl oz olive oil

tsp sesame oil

cup creamy peanut butter

red bell pepper

chicken breast

carrot
Instructions
Rinse brown rice and add to a pot with double the amount of water and salt, bring to a boil, then down to a simmer, cover and cook for 20-40 minutes depending on the packaging. Cut chicken breast into slices and marinate in a bowl with a little soy sauce and olive oil. Slice red pepper and sauté in a skillet over low-medium heat for 3-4 minutes and set aside. Add the chicken to the skillet with olive oil and cook on both sides for 4-5 minutes. Mix all ingredients for the sauce (peanut butter, soy sauce, rice vinegar, sesame oil, water, grated ginger) in a bowl or a blender until combined. Assemble the bowl by adding the rice first, then greens, then vegetables and chicken. Top with peanut sauce, scallion, cilantro and sesame seeds.View original recipe
