Tuna Salad Crispbread with Avocado and Tomato

This crispbread with avocado and tuna salad has been on rotation SO many times for lunch this past week! It's great for work lunches, just remember to store ingredients separately to prevent sogginess. The recipe makes enough for about two crispbreads.

What you need

pinch salt

can yellowfin tuna

tomato

avocado

tbsp mayonnaise

pinch pepper
Instructions
1. Drain the can of tuna. 2. In a bowl, combine the drained tuna, mayonnaise, salt, pepper, and chopped scallions until well mixed. 3. Mash avocado on top of each crispbread. 4. Add slices of tomato over the avocado, then top with the prepared tuna salad.View original recipe
